I’m not generally a morning person so I prefer to have something quick in the mornings. One of my favourite quick breakfasts is granola and vanilla Greek style yogurt. This is my standard breakfast on weekday mornings over cereal.
I don’t like too many store bought boxes of granola. Some aren’t crunchy enough, some have too many nuts or dried fruit or there isn’t enough fruit or nuts. To combat me being to picky for store bought granola and to save money, I researched how to make homemade granola. From the research I have come up with a great recipe that can have the optional ingredients customized to suit individual tastes.

Total time: 40 minutes
Yield: 12 servings
3 cups uncooked quick oats
2 cups Rice Krispies
6 tbsp honey
1 tsp olive oil
1/4 cup apple juice
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp vanilla extract
1/4 cup slivered almonds (or any nut)
1/4 cup raisins (or any dried fruit)
1. Preheat own to 350 F. Mix uncooked oats and Rice Krispies and spread on a non-stick baking sheet with sides. Bake for 10 minutes, stirring once.
2. Meanwhile, mix honey, oil, apple juice, spices and vanilla. When oats and Rice Krispies are done, remove from oven and mix with almonds. Pour spice mixture over cereal and mix thoroughly to distribute and coat completely.
3. Return to pan and bake for 15 to 20 minutes more, stirring every few minutes. Be careful that granola doesn’t burn, especially cereal along sides of pan.
4. Stir in raisins and let cool. Store in an airtight container. Makes 12 half-cup servings.
This is perfect for a quick breakfast or to serve at a family brunch. I even like to sprinkle the granola on top of pancakes with whipped cream for an extra crunch.
