Lately, I have been going through my Grandma’s recipe box and I’m finding all these great recipes I remember making with her when I was a kid. Peanut butter cookies, chocolate chip cookies, cakes, squares – a dessert for every occasion.
Today I’m sharing another one of my favourite recipes from my Grandma, oatmeal chocolate chip cookies. In the next couple of weeks a lot of the recipes that will be on Recipe of the Week will be from Grandma’s recipe box as I’m taking a trip down memory lane.
Prep time: 10 minutes
Cook time: 12 minutes
Total time: 22 minutes
1 cup margarine
1 cup brown sugar (do not pack)
2 eggs2 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
2 cups flour
3/4 cup oatmeal
1 cup chocolate chips
1. Preheat oven to 375F. Cream butter and margarine until fluffy. Add eggs and vanilla.
2. Slowly add baking soda, salt and flour. 3. Fold in oats and chocolate chips.
4. Drop by the tablespoonful onto an ungreased baking sheet about 2 inches apart. Bake for 12 minutes or until edges start to turn brown.
These cookies were so good, that I had to make a second batch before writing this post. In the second batch, I added a teaspoon of Epicure Selections Apple Pie Spice for variety. (You can purchase the spice here.)
I prefer if my chocolate chip cookies stay soft in the middle as I am not a big fan of crunchy cookies. These stay soft in the middle until the last cookie is gone; as long as they are stored in an air tight container. I like to enjoy a couple of these curled up with a good book and a tall glass of milk.
Happy wife, happy life!
